· 4 Fresh Brinjal(Baby Egg Plant) finely chopped
· 1 medium size onion finely chopped
· 1 tomato finely chopped
· ¾ - 1 tsp chilli powder
· 1 ½ tsp coriander powder
· 2 tsp Chana dal
· 3 tbsp Oil
· Salt to taste
· 1 cup water
Step 1: Transfer the brinjal to a bowl containing water as soon as you are done chopping to prevent them from turning brown.
Step 2: Heat oil in a thick bottom pan, add chana dal and saute it. Add chopped onion saute and for a minute. Add brinjal and saute once, allow it to cook until half done.
Step 3: Add tomato and saute for a few seconds. Add chilli powder, coriander powder, stir and add 1 cup of water, salt. Cover the lid and cook for 3-4 minutes or till gravy becomes thick. Turn off the stove and garnish with coriander.
- Serve warm
- Enjoy with roti/chapati.
- Grated coconut shall be added at the end before turning off stove(optional).
