Aloo paratha




                     Aloo Paratha(Indian flat bread stuffed with potato)

 



Ingredients:

  • 2 cups wheat flour
  • 1/2 tsp salt
  • water as required
  • 2tsp ghee

For stuffing

  • 1 Tbsp oil
  • 1 cup mashed potato
  • 1/4 tsp chilli powder
  • Onion and green chilli, finely chopped (optional)
  • Salt to taste




Directions:

Step1:  In a mixing bowl, mix the flour, salt, with required amount of water to form soft firm dough. knead for 5 minutes. Coat the dough with ghee/oil, cover the bowl and allow it to stand for 10 minutes


Step2:  Heat oil in a frying pan, add onion, chillies, mashed potato, chilli powder,salt. saute for a minute or two. Turn off stove and allow it to cool


Step 3: Make 6 medium size balls from dough. Roll each one into a small circle of about 3.5 to 4 inches. Take lemon sized stuffing and place it in center of flattened dough.

Step 4: Press the edges to ensure stuffing don’t spread out while flattening. Apply some wheat flour on rolling board and gently roll the stuffed dough with a rolling pin. Make sure that the parathas do not break, keep it thick (don’t roll out very thin as it is difficult to move to pan). Dust with more flour if required. 

Step 5: Heat non stick pan, smear ¼ tsp of ghee. Transfer the rolled out paratha to pan and fry for few second and flip over carefully. Continue to fry until  part it turns golden brown, also coat other side with ghee.

Note: 
  • Serve warm with ghee/ chili chutney 
  • I made use of left over potato curry(onions and green chillies are optional in stuffing)
