Potato Curry
Ingredients:
- 2 potatoes (200 gm.)
- 1 finely chopped onion
- 1 finely chopped tomato
- 1tsp chili powder
- Oil 3 tbsp oil
- Salt to taste
Directions:
Step 1: Half boil the
potatoes and peel it when cooled.
Step 2: Cut potatoes
in cubes and shallow fry them in a pan with a tablespoon of oil and bit of
salt.(It will take 3-4 minutes in medium
flame)
Step 3: Heat oil in a frying pan, add chopped onions and fry
for two minutes in a medium flame. Add tomatoes, Chili powder, fry till tomato
softens. Add fried potatoes and saute it for few seconds.
Step 4: Add ¾ cup water, adjust salt. Cook until you get
thick gravy(It will not take more than 4 minutes). Turn off the stove.
Note:
- Chop onion and tomatoes very thin as shown in picture above or you may opt to blend it coarsely to keep the texture.
- You would love it with poori’s
- Spice lovers can sprinkle garam masala before you turn off the stove.
- Ginger garlic paste is optional, gives a good flavor though.
